When I give left stick input the servo stays at that position. It does not bounce back at all. Right stick input works fine but the servo bounces back towards center when I let go of the stick.

This servo behaviour is normal and is the result of direct coupling of the rudder stick to the servo. This only becomes evident at the very end of the servo travel and as such it may not appear on one side if the servo endpoint of that side is set a little low. There is no need to worry about the non symmetrical behaviour. The gyro will work fine in flight.
